A perfect dosa is thin & crispy pancake prepared with fermented dosa batter which is stuffed with potatoes masala( Masala Sabji) & served with Chutney.

A perfect dosa is thin & crispy pancake prepared with fermented dosa batter which is stuffed with potatoes masala( Masala Sabji) & served with Chutney.

Soak the boiled rice & raw rice together & urad dal in other bowl in water for 3 hrs. Grind it into a smooth batter with required water. Close it with a lid. Keep it an overnight to ferment.
Next day add required salt & mix it well. - 2
Batter is ready.
For potato Masala: cook the potatoes in a cooker & mash it.
Heat a pan, pour 1 tbsp oil, add mustard, when it splutter, add dry red chilli. Then add ginger crushed, chopped onion, green chillies, curry leaves. Stir it well 2 min, add turmeric powder, mashed potatoes, salt & water. Stir it 3 min. - 3
When the water absorbs, add 1 tsp butter or ghee. Remove from heat.

Potato masala is ready to stuff in the Dosa.

Heat a pan, pour a ladle of Dosa batter, add 1 tsp ghee on it, then transfer 1 tbsp potato masala on one side. Then cover it & roast it on both sides.

Remove from heat.
Serve hot with chutney.
Crispy & Delicious Masala Dosa is ready. Serve it with butter (a small piece) on top.
