Osso buco is one of the most delicious traditional Italian dishes, cooked for a long time with beef shank and vegetables on a slow heat 😍
Steps

Sprinkle the beef shanks with salt and pepper and rub all over. Put it in a deep bowl and add flour on it, rub it first, then shake it out.

Put the olive oil in the pan and heat it. Cook both sides of the meat for a few minutes over high heat. Then put it on a paper towel lined plate.

Cook onion, carrot and celery stalk cut into small cubes in the same pot.

Add the tomato paste, tomato puree, diced garlic, leave of daphne and the wine/vinegar&water mixture. Cook on low heat for 10 minutes with the lid closed.

Put the meat in the pot and add enough water to just cover it. Close the lid and cook on low heat for 1 hour.

Add thyme and rosemary, cover again and cook for 1 more hour.

Remove the meat from the pot (if you used fresh rosemary, leave of daphne, thyme remove them too). Crush the sauce in the pot with a blender.

Put the meat back in the pot, cover the lid and cook on low heat for 30 minutes.
