Steps

Take brinjals and make 4 slits and stuff 4 garlic in slits.

Grease oil on brinjal and start roasting on gas by flipping occasionally.

Roast until brinjals become dark and cooked from inside completely.

Once baingan is done and cool down, Peel it and mash it with fork and keep aside.

Heat oil in kadhai, add jeera and chopped roasted garlic.

Than add onion and green chillies and saute for a minute.

Than add chopped tomatoes and again cook for a minute. And add boiled peas and mix. And cook for 2 minutes.

Than add red chilli powder, turmeric powder, coriander powder and salt and mix.

Cook till oil separates.

Now add mashed roasted brinjal and cook for 8-10 minutes.

Add garam masala and green coriander leaves. And a tablespoon of Desi ghee.

Serve with hot chapatis.
