Chitoi Pitha / Rice Pan Cakes

Chitoi Pitha / Rice Pan Cakes is a mandatory making during Makar Sankranti as it is prepared with newly harvested rice.
Chitoi Pitha is semi soft steamed rice pan cakes usually dipped in jaggery and enjoyed.
I have prepared the Coriander version of Chitoi Pitha where finely chopped Coriander leaves along with green chilli is punched with rice flour/ rice paste.

Soak rice and grind into semi smooth paste, keep slightly grainy.

Add finely chopped coriander + green chilli + salt and mix nicely along with required water.
We need a thick yet dropping consistency batter. - 3
Grease Pitha mould or Idli mould, pour moderate quality of rice batter and steam for 10 -15 minutes.

Un mould it and it is ready to serve.

This Pitha can be equally enjoyed with jaggery.
