Ingredients

30 Mins
  1. 2 cupsVarieties of vegetables like Brinjal, Yam, Sweet Potato, Cluster beans, Cow Pea, Pumpkin cut into an inch lengths
  2. 2 tablespoonsSprouts
  3. 2 tablespoonsboiled black chana
  4. 2 Tablespoonsgrated coconut
  5. 1 tspBlack pepper powder
  6. 2 tspRoasted Cumin Powder
  7. 1 tspSalt(as per your taste)
  8. 1 tspturmeric powder
  9. 2 tspchopped coriander
  10. 1 tspcow ghee
  11. 1 tspGaram Masala
  12. For Tempering
  13. 1/2 tspHing
  14. 1Onion cut small
  15. 2 tspcrushed ginger garlic
  16. 2Red chilli
  17. 1/2 tspCumin seeds
  18. 2Bay leaves
  19. 2 tspoil
  20. 2 cupswater

Cooking Instructions

  1. 1

    Heat oil in a thick bottom pan, Once the oil is hot add hing, cumin seeds, bay leaf, and red chili. As soon as cumin seeds crackle, add onion and crushed ginger garlic. Fry for 2 minutes until the raw smell of the masala goes off.

    Add all the vegetables and salt and turmeric, mix well, and keep stirring for a few minutes. Once everything is mixed well and the veggies are cooked slightly soft, add sprouts, black chana, and water and let the vegetables get cooked.

    Once veggies are cooked fully, add grated coconut, and garam masala, mix well and switch off the stove.

    Now add chopped coriander leaves and ghee on top.

Another tip: Try to cook this recipe in earthenware pot, the taste further enhances. Mitti ki khushbu!!
