Aloo-Matar Ande Ki Tahari

Heat oil in a wok, and add whole spices. Let them crackle. Add onion and green chilies. Saute for 1 minute. Add ginger garlic paste and 2 tbsp water. Saute for 1 minute. Add all powdered spices. Saute for 1 minute, then add tomatoes and salt. Cook till tomatoes are soft.

Add potatoes, and cook for 2-3 minutes. Add peas and cook for 1 minute.

Add basmati rice. Add 3.5 cups water (adjust). Let it boil. Cover and cook 6-7 minutes on medium flame. Stir 2-3 times gently.

After 6-7 minutes rice and vegetables are well cooked. Add boiled eggs. Put off the flame. Garnish with fried onion(optional) and coriander leaves. Cover the wok and leave for 5 minutes.
