Sarson Da Saag

Sarson da saag is a very popular and famous dish from the state of Punjab which is prepared using mainly mustard leaves. Along with mustard leaves spinach, bathua and radish leaves are added too. This is a very delicious saag which goes perfectly with makke di roti. You just cannot miss this amazing winter subji while you can get hold of all the fresh greens in the market easily.

First of all wash all the greens properly then chop it roughly. You have to measure the leaves only after cleaning. Prepare other things also for the saag.

Now add all the leaves along with chopped radish, green chillies, garlic, ginger and salt to a pot. And 5 cups of water and cook it on low heat for one and half hour. Keep on stirring in between.

Now mash it with a ladel, add maize flour to it and blend it coarsely using a hand blender. Do not blend it into a very fine paste.

Now heat ghee in a pan. add hing and onion to it and saute it until light pink in colour. Now add green chillies, ginger, garlic, red chilli powder and salt to it and saute it for a minute. Add tomato and cook until it is soft. Now add it to the saag and cook it again for 8 to 10 minutes on medium heat.

For tadka heat ghee in a pan and add chopped garlic to it along with a whole dry red chilli. Cook on medium heat until light pink in colour then pour over the prepared saag.

Serve sarson ka saag along with makke di roti, green chillies, onion and some jaggery.
