Ingredients

6 servings
  • 300 gmmustard leaves
  • 100 gmbathua leaves
  • 100 gmspinach
  • 50 gmraddish leaves
  • 1 cupreddish chopped
  • 4green chillies
  • 8-10garlic cloves
  • 1 inchginger
  • 1 tspsalt
  • 2 tbspmakai flour/ maize flour
  • Other ingredients -
  • 4 tbspghee
  • 1/2 tsphing /asafoetida
  • 2medium onion finely chopped
  • 1 tspred chilli powder
  • 2green chillies finely chopped
  • 1 inchginger finely chopped
  • 6-8 clovesgarlic finely chopped
  • 1tomato finely chopped
  • Salt to taste
  • Tadka -
  • 2 tbspghee
  • 10 clovesgarlic chopped
  • 1dry red chilli

Steps

    First of all wash all the greens properly then chop it roughly. You have to measure the leaves only after cleaning. Prepare other things also for the saag.

    Now add all the leaves along with chopped radish, green chillies, garlic, ginger and salt to a pot. And 5 cups of water and cook it on low heat for one and half hour. Keep on stirring in between.

    Now mash it with a ladel, add maize flour to it and blend it coarsely using a hand blender. Do not blend it into a very fine paste.

    Now heat ghee in a pan. add hing and onion to it and saute it until light pink in colour. Now add green chillies, ginger, garlic, red chilli powder and salt to it and saute it for a minute. Add tomato and cook until it is soft. Now add it to the saag and cook it again for 8 to 10 minutes on medium heat.

    For tadka heat ghee in a pan and add chopped garlic to it along with a whole dry red chilli. Cook on medium heat until light pink in colour then pour over the prepared saag.

    Serve sarson ka saag along with makke di roti, green chillies, onion and some jaggery.
