Egyptian Rice Kofta with Ground Beef
A delicious recipe from Egyptian cuisine. Hope you enjoy it!

Place the rice in a bowl, add 2 cups of water, and let it soak for 15 to 20 minutes.

Finely chop the onions in a food processor, then add the ground beef and process until well combined.

Add the spices and process again. Drain the soaked rice well, add it to the mixture, and process until smooth.

Add the dill, cilantro, and parsley, and mix well.

Shape the mixture into finger-shaped logs or rounds, as you prefer.

Fry the kofta in plenty of hot oil until golden brown.

For the sauce, finely chop the onions and tomatoes.

In a cooking pot, add the chopped onions with a little oil and sauté briefly over heat. Add the chopped tomatoes, stir well, and cook for 2 minutes.

Add the tomato paste and sauce spices, stir well, then add 3 cups of water (about 720 ml). Mix and bring the sauce to a boil.

Add the fried kofta to the sauce and simmer for 15 minutes, then remove from heat.

Serve hot with rice, vegetable salad, and fried potatoes.
