Ingredients

  • 3 cupwheat flour
  • 1 tspsalt
  • 1.5 tbspoil
  • Filling -
  • 1.5 cupyellow moong dal
  • 1 tspcumin
  • 1 tspcoriander seeds
  • 1 tspfennel seeds
  • 2 tbspoil
  • 2green chillies finely chopped
  • 1 inchginger grated
  • 1 tsphing/ asafoetida
  • 1/2 tspturmeric
  • 1 tspkashmiri red chilli powder
  • 1 tspgaram masala
  • 1 tspamchur
  • Salt to taste
  • 1 cupwater
  • 4 tbspcoriander leaves
  • Oil or ghee to roast

    First of all wash and soak moong dal for 2 hours. Add oil and salt to the flour and make a semi soft dough. Knead the dough and rest it for 15 minutes. Divide the dough into 12 equal portions.

    Crush cumin, coriander seeds and fennel seeds coarsely. Now heat oil in a pan and add spice powder along with green chillies, ginger and hing. Saute it for a minute on medium heat. Now add turmeric, red chilli powder, garam masala, amchur and salt to it and mix everything well.

    Now add soaked moong dal to it and give it a good mix. Add one cup of water and let it cook on medium heat until all the water is evaporated and moong dal is cooked properly. Now add coriander leaves to it and mix everything well. Let it cool down completely before using it.

    Take one portion of dough and dust it with dry flour. Now roll it into a 4 inch circle and put the filling in the middle. Now lift the edges and cover the filling properly. Again dust it with some dry flour and roll it into a paratha.

    Heat a pan on medium heat and put the paratha in it. Let it roast until light pink from the bottom. Now flip it over. Let it roast until light brown from the bottom and add some oil on top. Flip it over and add some oil again on the other side and roast it properly from both sides. Prepare all the parathas in the same way.

    Serve moong daal paratha along with pickles, chutney or curd. It can be served as a breakfast or a meal.
