Steam the crab until cooked, then crack the claws and legs to remove the meat. Clean the chicken breasts and chicken carcass, then add them to a pot with the ear of corn. Simmer to make a sweet broth. Season the broth to taste, then remove the chicken carcass and discard it.

Add the bánh canh noodles to the broth; the soup will thicken slightly, which makes it delicious. Serve the noodles in bowls with the crab meat, chicken, onions, and a sprinkle of pepper on top.
