Tangy and tasty Vegetable fried rice with leftover rice

Chopped all veggies and place all ingredients together. In a pan add oil and heat up. Add chopped garlic and saute 30 seconds. Add spring onion white parts,ginger and green chillies. Saute on high flame for 2 minutes.

Add all chopped veggies, cook them for. 2-3 minutes on high flame. Add black pepper, salt, Chilli flakes and oregano.. mix gently and cook for 2 minutes.

Add vinegar and mix again. Now add leftover rice and add ketchup and sauce.

Mix gently. Add spring onion green and give a nice mix. Cook for 2-3 minutes then switch off the flame.

The tangy and tasty fried rice is ready. Enjoy this at lunch or dinner
