Shredded chicken:
Preheat the oven 180ºC.
In a small bowl, mix together the chilli powder, cumin, salt, garlic powder, pepper and smoked paprika. Mix it together.

Place the chicken breast on a baking dish and season them all over with the spice mixture. Slowly pour the chicken broth onto the bottom of the dish (so as not to disturb the spices) and cover with foil.

Bake until cooked through, 35 - 40 minutes.

Set aside to cool for approximately 5 minutes, then shred the chicken with forks and return it to the juices in the baking dish until ready to serve.

To make tacos:
In a medium bowl, stir together the corn, cheeses, pickled red onion, fresh cilantro, lime juice, salt and pepper.

To make pickled red onion:
Place the sliced onion in a heatproof container.

In a small saucepan, whisk together vinegar, 1 cup water, sugar and salt. Bring to a boil over medium heat and then let simmer for 5 minutes.

Remove the brine from the heat and carefully pour it over the onions. Let sit for at least 1 hour, then cover and refrigerate until ready to use.

To finish :
In a medium skillet over medium high heat, char the tortillas for 1 minutes on each side, until browning begins. You want the tortillas to still be malleable, not hard or crispy.

Layer the chicken and corn mixture in the tortillas. Serve with pickled red radish and sour cream.
