Ingredients

  • 2 cupsbasmati rice
  • 1/2 cupcoconut milk
  • 10cloves
  • 2 tablespoonscoconut oil
  • 1star anise
  • 1 inchcinnamon stick
  • 1bay leaf
  • 2large black cardamoms
  • 2 cupsbroccoli sprouts
  • 2 cupsgreen capsicum, chopped
  • 2 tbspghee
  • 2 cupsgreen zucchini slices
  • 1 cuponion, thinly sliced
  • 2green chilies, chopped
  • 1 inchginger, chopped
  • 4 clovesgarlic chopped
  • 1 TablespoonJavitri
  • 1 tablespoongaram masala powder
  • 1Coriander chopped
  • To decorate:
  • 1/2 cuproasted pistachios,
  • 1/2 cuproasted almonds
  • 1/2 cuproasted cashews
  • requiredSalt
  • Paste:
  • 1/4 cupshredded coconut
  • 1green chili
  • 1/4 cupcilantro
  • 2 Tablespoonschanna
  • pilaf, biriyani

    Paste : Over medium heat; Heat 1 tablespoon oil, 1 minute. Add the paste ingredients and fry for 3 minutes. Soak fried ingredients in 1/2 cup of water for 10 minutes and grind in
    a mixer. Soak rice in 4 cups of water for 20 minutes. Strain prior to cooking
    Blanch the green vegetables. Immerse the veggies in boiling water for 4 minutes, then strain and submerge in ice water. Use hot water used for blanching as vegetable stock,
    You may use it for cooking the rice also. I did both

    Heat 3 tbsp oil in a wok over medium heat - 2 min. Add cumin, cloves, cinnamon, cardamom, star anise, bay leaf, cardamom and fry for 2-3 minutes. Add onions and fry for 3-4 minutes. Stir in garlic green chilies. Add soaked rice and fry for 3 minutes..

    Transfer the fried ingredients from the kadai to rice cookerI used an electric cooker. Add 4 cups vegetable stock, ½ cup coconut milk. Stir in javidri, paste and ghee; cover the cooker and turn the cooker on. After the rice is 90% cooked, add the blanched vegetables and stir

    Stir in the masala powder and cover the cooker. Once the rice is cooked, the cooker switches off.. Season with salt and transfer to a serving dish. Aromatic flavorful tasty pilaf is ready. Garnish with chopped cilantro, and roasted nuts.

    Serve hot. You may serve with chips, raitha etc. Enjoy
