Ingredients

Serves 2 servings
  • 2eggs
  • 1duck confit leg (or substitute with pork or 7 oz/200 g shrimp)
  • 7 ozrice vermicelli noodles (200 g)
  • Broth
  • Shrimp heads (or 1 bouillon cube also works)
  • 1 stalklemongrass
  • 2kaffir lime leaves (optional)
  • 3/4 cupcoconut cream (or coconut milk, about 200 ml, use your preference)
  • 2 teaspoonsThai red or yellow curry paste (laksa paste is even better if you have it)
  • Juice of 1/2 lime (or more to taste)
  • 3 tablespoonsfish sauce (preferably from Phu Quoc)
  • Toppings
  • Tofu puffs (or pan-fried tofu)
  • leavesCilantro
  • Fried onions
  • Chili paste

    Make the broth using shrimp heads, lemongrass, and curry paste. Alternatively, use a chicken or fish bouillon cube. Simmer over low heat for about 20–30 minutes.

    Cook the duck confit according to package instructions. If using shrimp or other meats, marinate briefly and sauté quickly.

    Meanwhile, prepare the rice vermicelli noodles. Boil the eggs for 9 minutes once the water is boiling. Add a bit of lime juice to the broth.

    Drain the noodles and place them in bowls with the hard-boiled eggs, tofu, duck confit, and some cilantro.
