What is Laksa? It's a noodle soup typical of Southeast Asia, usually made with coconut milk and shrimp, chicken, or other meats. It's very popular in Singapore, Malaysia, and Indonesia. Each country (and region) has its own version. This one is a fusion and not authentic, but it's still delicious. Note: the flavor is quite spicy.

Make the broth using shrimp heads, lemongrass, and curry paste. Alternatively, use a chicken or fish bouillon cube. Simmer over low heat for about 20–30 minutes.

Cook the duck confit according to package instructions. If using shrimp or other meats, marinate briefly and sauté quickly.

Meanwhile, prepare the rice vermicelli noodles. Boil the eggs for 9 minutes once the water is boiling. Add a bit of lime juice to the broth.

Drain the noodles and place them in bowls with the hard-boiled eggs, tofu, duck confit, and some cilantro.
