Cauliflower in Yogurt Sauce

I remember my grandmother used to make this in my childhood. I did not like cauliflower, but the sauce was so tasty I was eating it like crazy.
Then my mother continued to cook it home and soon I started loving cauliflower. Now its my first time cooking it and I can say it was really tasty try. It reminded me childhood taste, which adults are missing usually.

Cooking Instructions
- 1
Cut cauliflower in small pieces and add them in boiling water for 10 minutes maximum.
- 2
Prepare cold icy water and put the boiled cauliflower inside it. It will stop cooking cauliflower internally and it will remain crunchy.
- 3
While its getting cold, start preparing sauce. Mix yogurt or mayonnaise with water, until you get consistency like in video. You should prepare the amount to cover your cauliflowers halfway.
- 4
Add salt, chilli flakes, ground coriander to your taste. It should be a bit chilli.
- 5
Add finely cut parsley, coriander, small amount of green chilli and garlic clove. Mix 90% of it with the sauce. We will sprinkle the rest on top of the finished dish. Sauce should be a bit garlicky.
- 6
Now, lets start frying the cold cauliflower. Fry it on medium heat with olive oil until golden brown.
- 7
Let it cool for 5 minutes on a plate and after that slowly put the fried cauliflower in the sauce. Gently pour the sauce by spoon to each cauliflower. Sprinkle remaining greens and garlic on top and enjoy!

The lemon and tomato not only add flavor but also keep the rice fluffy. Slow cooking for perfect results!! I also make them in the oven, in an oiled Pyrex dish lined with leaves, place the dolmadakia on top, cover again with leaves, cover with hot water, then with aluminum foil, and bake at 375°F (190°C) for 1 hour. Fennel Frond Yogurt Sauce Fennel Frond Yogurt Sauce
I wanted to use these fennel fronds. From what I’ve heard, they’re usually discarded. I read that you could make a pesto from it, but I was pretty turned off by that personally. I thought the flavor would better lend itself to some kind of a yogurt sauce... so I went that route. Karl -
