Ingredients

15 minutes
  1. 1 tablespoonbutter or margarine
  2. 1onion, minced
  3. 2-3jalapeño peppers, minced
  4. 2 clovesgarlic, minced
  5. 3plum tomatoes, minced
  6. 1 boxfrozen chopped spinach
  7. 8 oz.cream cheese, softened
  8. 1 cuphalf & half
  9. 1 1/2 cupsshredded Monterey Jack cheese
  10. 1 tablespoonred wine vinegar
  11. Salt and pepper

    Defrost spinach. Squeeze as much water from it as possible.

  2. 2

    Preheat oven to 350°.

  3. 3

    Melt butter in large skillet over medium-high heat. Add onions, jalapeños and garlic. Season with salt and pepper. Saute for about 5 minutes.

  4. 4

    Reduce heat to low. Add tomatoes, spinach, cream cheese and half & half. Stir until cream cheese is melted.

  5. 5

    Remove from heat and add Monterey Jack cheese, red wine vinegar and season with salt and pepper. Stir until well combined.

  6. 6

    Pour into baking dish and bake for 15 minutes or until lightly brown and bubbly.

  7. 7

    Enjoy with tortilla chips. If you find that the dip is too spicy for your liking, try it with lime tortilla chips. The lime flavor helps cut down the spiciness.
