As the name says, this Pulao I make with verities of vegetables along with the regular spices. This is so wholesome that you can just enjoy it as it is or pair with a fresh bowl of Cucumber Raita.

I have used many vegetables in this recipe but if you don’t have all the vegetables available, you can still make with what is available in your freeze, don’t skip tomato though, as you will not get the same look and taste with out those beautiful red tomatoes.

Ingredients

  • 2 cupsBasmati Rice
  • 3 cupsvegetable of your choice like potato, peas, cauliflower, beans, carrots
  • 1 cupsmall soya chunks
  • 1/2 cupmethi leaves
  • 1/4 cupmoong sprouts
  • Whole garam masala like : bayleaf, cinnamon, cloves, star anis
  • 1big onion
  • 3tomatoes
  • 2 spoonsginger garlic paste
  • 2 tspcoriander powder
  • 1 tsproasted cumin powder
  • 1 tspchilli powder
  • 2 tspgaram masala
  • 3 tspghee
  • Salt & turmeric

Steps

    Soak rice for half an hour. Assemble all the ingredients. Soak soya chunks in hot water for 10 minutes and squeeze.

    Heat ghee in a heavy bottomed pan. Add the whole garam masala: star anis, bay leaf, cinnamon and cloves. Add onion and once onion is translucent add ginger garlic paste. Cook for few minutes.

    Add all the vegetables, soya chunks and keep frying for few minutes. Mix in tomato, salt, turmeric, coriander, chilli powder, cumin powder. Cover and cook in slow heat for 5/6 mins or till tomato becomes mushy. In the mean time boil 5.5 cups of water in a separate vessel.

    Now add soaked rice and chopped methi leaves. Add garam masala now. Add the boiling water, let entire thing come to boil, then reduce the flame. Cook covered for 15 mins. Keep a heavy item on top, so that steam doesn’t goes out.

    Once switching off the heat, keep the rice covered for another 15 mins before serving.
