Kabocha Squash Salad with Walnuts

I added some crunch and nuttiness to the usual plain kabocha squash salad.
Add some ham, fish sausage, corn and so on to taste and mix everything together!
I added yogurt, but you can just use all mayonnaise instead.

Kabocha Squash Salad with Walnuts

Cut up the kabocha squash, put into a heatproof container and microwave until tender. When cooked through, mash with a fork.

Crumble up the walnuts with your hands, put on a plate lined with a paper towel and microwave for 2 minutes. Leave to cool.

Slice the onion thinly and put in a bowl of cold water. Slice the cucumber thinly and sprinkle with a little salt.

Just before you mix them in, squeeze out the onion and cucumber very tightly. Squeeeeze!

Mix all the ingredients together to finish.
