I got tired of just plain old salted fried salmon, so I thought this up!

Try adding carrots, cabbage or whatever vegetables you have in your refrigerator! These are pretty big, so I cook them in a regular oven instead of a toaster oven, but you can use a toaster oven too if they fit inside! For 2 people. Recipe by Pu-kosan

Ingredients

2 servings
  1. 2cuts Fresh salmon filets
  2. 1 bagBean sprouts
  3. 1/2 mediumOnion
  4. 2Green peppers
  5. 1 packagesEnoki mushrooms
  6. 1 packagesShimeji mushrooms
  7. 2 tbsp★Miso
  8. 2 tbsp★Mayonnaise
  9. 2 tbsp★Sake
  10. 1 tbsp★Sugar
  11. 1 tsp★Soy sauce
  12. 2pats Butter
  13. 1Salt and pepper

Cooking Instructions

  1. 1

    Preheat an oven to 465F/240C. Mix all of the ★ flavoring ingredients together, cut the vegetables into easy-to-eat sizes, and shred the mushrooms.

    Put vegetables into the aluminum foil, place the salmon on top, and sprinkle the whole thing with salt and pepper. Put the flavoring ingredients on top of the salmon, and put a pat of butter on top.

    Tightly close the aluminum foil, and cook in the preheated oven at 465F/240C for about 20 minutes.

    Scatter with green onions and spritz with lemon to taste.

    Flake the salmon, mix it up with the vegetables, and enjoy!
