Preheat the oven to 350°F. In a mixing bowl, combine the seeds, flour, oats, herbes de Provence, and a pinch of salt. Mix well. Add the oil and water. Stir with a spoon.

Roll out the dough between two sheets of parchment paper until it's even. Carefully remove the top sheet of parchment paper.

Slide the preparation onto a baking sheet. Bake for about 25 minutes, keeping an eye on them towards the end to prevent burning. Let cool completely. Break into pieces by hand.

You can pre-cut the dough before baking using a pizza cutter.

Store these crackers in a metal tin.
