Where I live, I can't find red amaranth, so I use green amaranth instead. Amaranth greens are highly nutritious, good for the blood, and make a refreshing, easy-to-cook soup.

Pick and wash the amaranth greens thoroughly, then chop them. Peel and chop the shrimp, then marinate with 3 tablespoons fish sauce (45 ml) and 1 tablespoon sugar (12 grams). Let the shrimp absorb the flavors.

Bring a pot of water to a boil. Add the marinated shrimp and skim off any foam as it cooks. Add the amaranth greens, stir well, and season to taste. Turn off the heat. Serve in a bowl and sprinkle with black pepper on top.
