After seeing Nguyen Hoa’s cooksnap of Beef Salad (Nộm bò), I was inspired to make my own version. I adjusted the recipe a bit to make it more approachable for foreigners, using a sauce without fish sauce for seasoning.

Ingredients

Serves 4 servings
  • 2 lbsbeef flank steak (about 900 grams)
  • 4limes
  • 2 tablespoonsgranulated sugar (about 25 grams)
  • 4 tablespoonsThai chili paste with soybean oil sauce
  • 2red onions
  • 1 bunchrice paddy herb (rau om)
  • 1 bunchsawtooth herb (ngò gai)
  • Shrimp chips
  • Sesame seeds and chili peppers, to taste

    Slice the beef thinly. Squeeze the limes into a large bowl, add the sugar and 4 tablespoons of chili paste, and mix well. Finely chop the herbs, thinly slice the red onions, and slice the chili peppers.

    Blanch the beef briefly in boiling water, then drain well. Divide the beef into two portions. Gradually mix the beef with the sauce, tossing to coat. Add the herbs, onions, and chili peppers, and continue mixing until well combined.

    Repeat with the remaining beef so all the meat is evenly seasoned. Transfer to a serving plate, sprinkle with sesame seeds, and serve with shrimp chips.
