I wanted to make a new okara based confectionary ...
I made this recipe referencing Lenna's ”Low Calorie Baked Donut using Tofu and Okara. I made it with the combination of my favorite brown sugar and soy bean powder, and wrote it down and posted it here so I wouldn't forget it.

You can make this without oil, but it will get dry and unpleasant to the palate after a while (especially after defrosting), so it's better to add it. Use an amount to your liking. For 65g, for about 7 pieces;124kcal each. Recipe by tearstar

Ingredients

  1. 150 grams・Fresh okara
  2. 40 grams・Rice flour
  3. 10 grams・Katakuriko
  4. 30 grams・Kinako
  5. 60 grams・Brown sugar
  6. 2 tsp・Baking powder
  7. 150 gramsSilken tofu
  8. 1 tbsp- i used taihaku sesame oil Vegetable oil

Steps

  1. 1

    Put all the・ ingredients in a plastic bag and shake well to mix.

  2. 2

    Add oil and tofu while mashing and massage well until it becomes smooth.

  3. 3

    Round the dough like when you make patties. Line them on parchment paper and make a hole with a finger. ※ It will be easier to do this process with wet hands.

  4. 4

    ※ How to make a hole. ① Stick your index finger in the middle and stretch the hole bigger little by little. ② Make a circle with your index and middle finger and poke through the hole. Spin the dough with your fingers to widen the hole.

  5. 5

    Bake in a preheated oven at 375F/190C for about 20 minutes.

  6. 6

    Coat with whatever you like once the donuts are cool. The pictured donut is dusted with kinako (toasted soy bean flour).
