In Tamilnadu, uthappam is a popular breakfast, and lunch and dish. My uthappam is more colorful 10and nutritious than the the uthappms served in restaurants. The restaurant recipe usually includes onion and tomatoes. I being a health food nut, include quite a few veggies, tomatoes, onion, bell peepers, cucumber, microgreens and etc. It is a whole food with carbohydrate, protein, minerals, and vitamins. Start the day with this healthy breakfast
Wonder what microgreens are? Microgreens are a type of plant that falls between a sprout and a baby green. They’re nutritious offer many health benefits. Microgreens are packed with nutrients. While their nutrient contents vary slightly, most varieties are rich in potassium, iron, zinc, magnesium and copper. Microgreen in this uthappam is broccoli microgreen I grew in my kitchen windowsill, batter includes millet flour in addition to rice and urad.

Ingredients

  1. 3 crice flour
  2. 1/2 curud flour
  3. 2 cmulti millet flour (includes kodomillet)
  4. 1 cupSemolina (suji)
  5. Pinchasafetida
  6. 1 tspcumin powder
  7. 1 tbspcoriander powder
  8. 1 tspcaraway seeds
  9. 1 tspPepper powder
  10. 1/2 tspturmeric powder
  11. 2 ccurd
  12. Vegetables:
  13. 1/2 cupOnions, finely chopped
  14. 1/2 cupred bell pepper, finely chopped
  15. 1/2 cuptomatoes, finely chopped
  16. 1/2 cred amaranth, finely chopped
  17. 1/2 cgreen, red, and yellow bell pepper, finely chopped
  18. 1/2 ccucumber, peeled, grated
  19. 1/2 cmicrogreen, finely chopped
  20. 1 tablespoonGinger finely chopped
  21. 5cloves, Garlic, peeled, finely chopped
  22. 2green chilies, finely chopped
  23. 1 cupCoriander leaves, finely chopped
  24. Required Salt
  25. 1 tspBaking soda
  26. Required sesame seed oil

    Make a checklist. Collect the necessary items in advance and keep them ready. Just a few photos of some ingredients

    Whisk together semolina, millet flour, rice flour, urud flour, Spices, and curd in a bowl. Add the vegetables, curry and coriander leaves. Add enough water to get the right consistency. The batter should not be watery or lumpy. Add baking soda and salt, stir and rest for 30 minutes

    Place a kadai over medium heat. I use cast iron shallow kadai; it is healthy; and retains heat. Grease the kadai with a tbsp oil. Pour 1 cup batter and spread with a spoon to make a circle. Sprinkle 1 tablespoon of oil evenly over the top and cover. After a couple of minutes,
    you can smell the aroma of cooked uthappam. Flip and cover. cook for 3 minutes,
    It may take 5-6 minutes to make a uthappam.. Cooking time depends on the stove and the size of the uthappam.

    You can make approximately 10 uthappams.

    Transfer the uthappams to a serving plate. It is soft and spongy. Flavorful, aromatic, nutritious colorful uthappmas are ready for your eating pleasure. You may garnish them with finely chopped tomatoes, onions and cilantro, It is left to you. Serve with chutney, pickles or veggie masala curry.
