Who loves pancakes? I sure do! Today, I'm sharing my recipe for fluffy, soft pancakes. It's easy to make as always. Let's check out the ingredients!

[Mix dry ingredients] Sift the cake flour, all-purpose flour, sugar, baking powder, and salt together.

[Mix wet ingredients] In a separate large bowl, whisk together the milk and eggs until well combined.

Gradually add the sifted dry ingredients to the wet ingredients in 2-3 batches, stirring just until no dry flour remains. Be careful not to overmix, or the pancakes will be tough. (This is very important!)

Pour in the melted unsalted butter and gently mix until just combined.

Heat a flat nonstick pan over medium heat. Add a little butter. For a smooth pancake surface, wipe off excess butter with a paper towel so only a thin coating remains on the pan.

Slowly pour the batter onto the pan to your desired pancake size.

When bubbles start to form on the surface (about 2 minutes), flip the pancake. Cook the other side for about 1 minute until done.

Stack the pancakes as you like. Serve with fruit, jam, honey, or maple syrup as desired.
