Ingredients

6 muffins
  1. 1large egg
  2. 1/4 cupGreek yogurt
  3. 2 tablespoonshoney
  4. 1/2of an large apple finely grated
  5. 1/2 cuppacked grated carrots
  6. 3/8 cupall purpose flour
  7. 2 tspbaking powder
  8. 1/2 tspsalt
  9. 1/4 cupoat flour
  10. 2 tablespoonschia seed
  11. 1/2 cupcranberries or raisins
  12. 1/2large apple cubed
  13. 1/4 cupchopped toasted walnuts

Cooking Instructions

    Preheat to 350 F

  2. 2

    Spray muffin tin with oil spray

  3. 3

    In a large bowl, mix together flour, baking powder, and salt

  4. 4

    Add the ground oat flour, chia seed, cranberries or raisins and chopped walnuts and stir

  5. 5

    In a small bowl, mix together green yogurt, egg, honey, vanilla, grated carrots, grated apple, and chopped apples

  6. 6

    Pour wet into dry ingredients and fold to moisten all the flour until just combined

  7. 7

    Pour into muffin tins and garnish the top with more crushed oats and crushed walnuts(optional)

  8. 8

    Bake for 35-40 minutes until golden brown in the sides

  9. 9

    Cool in wire rack out of the tin

  10. 10

    Enjoy! Can freeze the rest in airtight container
