Preheat oven to 180c/ gas 4 / fan 160c. Oil and line bads and sides of 18cm square tin with baking parchment.

Sugar into a large mixing bowl, pour oil and add eggs. Lightly mix with a wooden spoon
Stir in grated carrots raisins and orange zest. - 3
Mix flour bicarb and spices and then sift into the bowl of wet ingredients. Lightly mix all ingredient. Mixture should be soft and almost runny.

Pour mixture into the prepared tin and bake for 40-45 mins. It should feel firm and springy. Cool in tin for 5 mins and then then out and peel off paper and cool on wire rack. If wanted can be frozen at this point.

Whilst cooling on wire rack. Beat together the frosting ingredients. You want icing to be as runny as single cream.. set the cake on serving plate and bodly drizzle icing back and fourth over the top
