Coffee and Chocolate Financiers

I made this for my friends to give out on Valentine's Day. I added coffee to my favorite chocolate financier and made this recipe.
It tastes better the next day or after 3 to 5 days. It's just mixing, so there are no special tricks. You could use unsalted or salted butter. Browned butter will add more flavor, but you could also microwave and melt the butter. For 10 rose shape molds. Recipe by twinflower

Brown the butter in a small pan and strain. Combine all ◆ ingredients and sift in advance.

Whisk egg white in a bowl. Add sugar, honey and mix without creating bubbles.

Add the ◆ ingredients in one go and mix like scooping up the mixture.

Mix the ○ ingredients, rum, and coffee and microwave to melt. Then add it to the mixture.

Add the browned butter to the mixture in 3 portions and mix like scooping up the mixture. Let the dough rest in the refrigerator for 2 hours to one night.

Coat the silicone mold with melted mutter. Preheat the oven to 180°C.

Pour the dough into the mold using a spoon to be about 70% full. Drop a block of chocolate on each mold and bury the chocolate in the dough so that it won't pop out.

Bake in a 180°C oven for 20 minutes. (For our gas oven, I baked for 18 minutes.) Take the cake out of the mold and let cool.

Place the financiers in a basket and wrap it up.

I divide the financiers, put them in a plastic bag add a paper doily, staple it and seal it with a sticker.
