Ingredients

  1. Jackfruit:
  2. 200 g (1 1/4 cup)jackfruit, chopped
  3. 120 ml (1/2 cup)Greek yoghurt
  4. 1/2 tspchilli powder
  5. 1/4 tspground turmeric
  6. 1 tspground fenugreek
  7. 1/4 tspgarlic powder
  8. 1/4 tspground ginger
  9. 1/2 tspgaram masala
  10. 1/4 tspsalt
  11. Curry:
  12. 2bay leaves
  13. 1/2 tspground cinnamon
  14. 4 podscardamom
  15. 7whole cloves
  16. 2 tspground cumin
  17. 1/2 tspturmeric
  18. 1 tspchilli powder
  19. 1 tspground coriander
  20. 1/2 tspsalt
  21. 3tomatoes, chopped
  22. 120 ml (1/2 cup)water
  23. 1/4 tspgaram masala
  24. 2 tbspfresh coriander

    Place the jackfruit in a bowl with the curd, chilli, turmeric, fenugreek, garlic, ginger, garam masala and salt. Stir to combine and then leave to marinate for 30 minutes.

    Add the jackfruit with the marinade to a frying pan. Cook over medium heat for 20 minutes.

  3. 3

    In another frying pan, add the bay leaves, cinnamon, cardamom, cloves and cumin. Cook over medium-high heat for 1 minute, until fragrant.

    Add the onion, garlic and ginger and cook for 5 minutes, until the onion has softened.

  5. 5

    Reduce heat to medium-low and add the turmeric, chilli, ground coriander and salt. Cook for 1 minute, until fragrant.

  6. 6

    Add the tomatoes and mix well. Cook for 10 minutes, until softened.

  7. 7

    Add the fried jackfruit to the pan with the tomatoes along with the water. Cover and simmer for 15 minutes.

    Add the garam masala and fresh coriander and serve.
