Cauliflower, sweet potato and carrot soup

Another gray, rainy day. Feels like soup weather so I've made the most of this with this delicious, warming soup. Also used up a leftover cauliflower head and a sweet potato that was lying around.

Another gray, rainy day. Feels like soup weather so I've made the most of this with this delicious, warming soup. Also used up a leftover cauliflower head and a sweet potato that was lying around.

Cut up your carrot, sweet potato and cauliflower.

Heat up some oil in a large pot and when very hot, begin sautéing the onions.

Add the minced garlic, chilli and courgette along with your ginger, black pepper and salt.

Now Add all of your veggies and after a couple of minutes add the veggie stock. Bring to a boil, reduce and cover with a lid.

After 30 minutes, let it cool a little and give it a blend. Serve with parsley or blue cheese or even a little of both. You can serve this soup as a side to some steak and potato wedges or basically any meal that takes your fancy.
