Preheat the oven to 200°C.

Place the cake flour and butter cubes in a mixing bowl and rub together until mixed.

Mix the cottage cheese into the flour mixture using an egg lifter until soft dough forms.

Press the dough into a rectangle and cover in cling wrap. Refrigerate the dough for approximately 15 minutes.

Lightly mix the game meat, salt, pepper, coriander, cloves, hanepoot wine, red wine, lemon juice and apricot jam together. Transfer to an oven-proof dish.

Roll out the dough on a floured surface and place on top of the meat mixture.

Press the dough firmly against the edge of the dish and place a few decorations on top of the crust, if preferred.

Beat the egg yolk and water together and brush over the dough. Prick the crust a few times for the steam to escape. You can also use a pie funnel.

Bake the pie for approximately 30 minutes until the crust is golden brown and done.
