Lentil and Swiss Chard Soup (Vegan)

Today I have to go out, so I made this soup early to use up the leftover Swiss chard from the Charquicán I made yesterday. I saved the chard stems to fry them later, which are also called 'false pejerreyes.'

Today I have to go out, so I made this soup early to use up the leftover Swiss chard from the Charquicán I made yesterday. I saved the chard stems to fry them later, which are also called 'false pejerreyes.'

Heat the olive oil in a pot and sauté the garlic with the onion until the onion looks translucent. Add and sauté the bell pepper, carrot, squash, and oregano.

Add the corn, water, tomato sauce, salt, pepper, and lentils. Bring to a boil, cover, reduce the heat, and simmer for about 20 minutes until the lentils are cooked.

Stir in the Swiss chard and cook for 5 minutes. Turn off the heat and let the soup rest for a few minutes before serving.
