Add the cumin, ginger, cardamom, cloves, coriander, mixed spice and cayenne to a large saucepan. Toast for 2 minutes over medium high heat, until fragrant.

Add the onion and cook for 5 minutes, until softened.

Add the bell pepper and courgette and cook for another 5 minutes.

Stir in the raisins, salt, orange zest and chickpeas.

Add the vegetable stocks and fresh orange juice. Bring to a boil and then cover and take off the heat. Leave for 5 minutes.

Fluff the couscous with a fork and stir in the fresh mint. Serve.
