Ingredients

15 minutes
Serves 2-4 servings
  • 1 piecebarley rusk
  • 1tomato, diced
  • 1small cucumber, sliced
  • 1green bell pepper, diced
  • 1onion, diced
  • 3 1/2 oz. (100 grams)anthotyro cheese, diced (or substitute with ricotta or feta)
  • 1little chopped capers
  • 6-7Kalamata olives, chopped
  • Salt, pepper, oregano
  • Olive oil, to taste
  • Vinegar

Steps

15 minutes
  1. 1

    Lightly moisten the barley rusk with water and break it into pieces in your bowl.

  2. 2

    Add the chopped vegetables, cheese, capers, and olives.

  3. 3

    Sprinkle with salt, pepper, oregano, and drizzle with olive oil and vinegar.

  4. 4

    This is one of the best dinners—not just for the evening!
