Slice the avocado and drizzle with a little lemon juice to prevent browning. Cut the shrimp in half lengthwise. Cut the hard-boiled egg in half. Soak the sliced onion in ice water, then drain.

Cook the somen noodles according to package instructions, then rinse in ice water. Roll the noodles and place them on a plate, ready for assembly.

Arrange all the ingredients on the plate. Pour mentsuyu (noodle sauce) around the edge of the plate to finish.
