Ingredients

  • 12Ecuadorian shrimp, peeled and deveined
  • homemade tartar sauce
  • 3/4 cupmayonnaise (180 grams)
  • 1 teaspoonDijon mustard (5 grams)
  • 1 tablespoonchopped parsley (4 grams)
  • 1 tablespoonchopped green onions (6 grams)
  • 1 tablespoonchopped capers (8 grams)
  • 1 tablespoonchopped green olives with pimento (8 grams)
  • 1small dill pickle, chopped (15 grams)
  • lemon dressing
  • 1/4 cuplemon juice (60 ml)
  • 1/4 cupolive oil (60 ml)
  • 1/2 teaspoonsalt (3 grams)
  • 1/4 teaspoonground black pepper (1 gram)
  • Mix all ingredients well
  • mango salad
  • 2 cupschopped romaine lettuce (about 100 grams)
  • 1mango, diced
  • 1tomato, diced
  • 1/2 cupgoat cheese, cubed (60 grams)
  • beer batter
  • 1/2 cupall-purpose flour (60 grams)
  • 1/4 cupcornstarch (30 grams)
  • 1/4 cuprice flour (30 grams)
  • 1/2 teaspoonpaprika or mild chili powder (1 gram)
  • 3/4 teaspoonsalt (4 grams)
  • 1/4 teaspoonground black pepper (1 gram)
  • 3/4 cupvery cold beer plus 2 tablespoons (200 ml)

    Tartar Sauce
    In a small bowl, mix all the ingredients for the tartar sauce and refrigerate.

    Lemon Dressing
    In a small bowl, whisk together all the ingredients for the lemon dressing.

    Mango Salad
    In a bowl, combine the mango, tomato, goat cheese, and romaine lettuce. Add half of the lemon dressing and toss to combine.

    Assembly
    Prepare 2 plates. Place a bed of lettuce on each plate and top with the mango and goat cheese salad. Place a small bowl of tartar sauce in the center. This is to serve the shrimp immediately after frying.

    Beer Batter
    Sift the ingredients for the batter and add the beer. Mix well.

    Heat a pot with oil for frying.

    Pat the shrimp dry and sprinkle with a little rice flour.

    Heat a pot with frying oil.

    Dip the shrimp in the beer batter and fry until golden brown.
