Pitahaya pulp is neutral in taste and goes well with any vegetables, fruits and seafood. The exotic filling makes this salad incredibly bright and festive.

Steps

Prepare food. Boil the lobster, if necessary, in salted water with spices. Hard boil two eggs.

Cut the pitahaya in half lengthwise and carefully remove the center with a spoon. I got a fruit with red flesh, which is even more interesting.

Cut cheese, pitahaya, avocado and lobster meat into small cubes. Shallots into thin half rings.

Add boiled yolks, mustard, dill and salt to taste to natural yogurt. Mix well until smooth.

Gently mix all ingredients. Fill pitahaya “cups” and place yogurt sauce on top. You can garnish with Hibiscus salt and lobster caviar if you have it.
