Homemade Southern-Style Longaniza with Garlic Mashed Potatoes and Red Cabbage Sauerkraut

Homemade Southern-Style Longaniza with Garlic Mashed Potatoes and Red Cabbage Sauerkraut

MAKE THE RED CABBAGE SAUERKRAUT
Heat the oil in a skillet and sauté the onion. Once it starts to brown, add the remaining ingredients. Cover and cook until the cabbage is tender, stirring occasionally. - 2
GARLIC MASHED POTATOES
Place the potatoes in a pot, cover with water, and season with a little salt. Once the water boils, reduce the heat and cook for 15 to 20 minutes, until the potatoes are soft. Drain the water. - 3
Heat the oil in a skillet and sauté the garlic. Add the parsley, cook for about 20 seconds, then add to the potatoes.
Add the milk and butter to the potatoes and heat. Mash the potatoes until smooth. - 4
GRILLED LONGANIZAS
Let the longanizas sit at room temperature for 30 minutes.
Heat a griddle or grill. - 5
Prick the longanizas about 6 times around so they don’t burst while cooking.
Brown the longanizas on the griddle or grill. - 6
Once cooked, serve with garlic mashed potatoes and red cabbage sauerkraut.
