When steaming hot days continue, we all lose our appetites. That's when I make this recipe. I like that you can eat a lot of vegetables while slurping the cold, refreshing noodles. Vary the mixture of vegetables by using lettuce instead of cucumber, or adding tomatoes, and so on.

Cooking Instructions

Stir fry the ground meat in a frying pan (no need to add any oil since the meat cooks in its own fat).

Combine the soy sauce, miso, mirin, ginger and garlic.

Add to the frying pan as you're stir-frying the meat.

Simmer for a bit and it's done.

Prepare the cucumbers as such. (With alternating strips running along their lengths.)

Julienne the cucumbers.

Here's the meat-miso!

Use your favorite memil guksu, or any other noodles that can be served cold.

Boil the noodles, drain and put on serving plates.

Top with the cucumber...

Pour the miso-meat sauce over, plus the sauce packs that come with the noodles...

I can't buy only the noodles at my near-by supermarket, and it's too expensive to buy the whole set because I don't use the soup. So when I can't buy only the noodles, I make this Korean-style dish with Chinese noodles or somen noodles.If you don't have the kimchi base, you can substitute with the juice from Chinese cabbage kimchi (2-3 tablespoons). I thought I'd try milk first, but that has a character that doesn't really go well with this. I think that soy milk just goes better with Japanese ingredients. I don't have special bamboo plates for cold soba, so I just used a sushi rolling mat under the soba noodles and used tea cups as dipping cups...
