Ingredients

  1. 3eggs
  2. 1.5 cupsAP flour
  3. 3/4 tspsalt
  4. 1/4 tspbaking soda
  5. 1 tspbaking powder
  6. 3/4 cupplain yogurt
  7. 2-3 tsplemon extract
  8. 2 tbsplemon juice
  9. 1/2 cupcooking oil
  10. 1 cupgranulated sugar
  11. 2 tbspzest-2 large lemons
  12. syrup
  13. Around 2 tbsp lemon juice
  14. 1 tbspsugar
  15. icing
  16. 1/2 cuppowdered sugar
  17. 1/2 tbspmilk
  18. 1 tbsplemon juice

Cooking Instructions

    Rub together the sugar and lemon zest for 3-5 minutes

    Now beat together the lemony sugar and eggs together for about 2 minutes until light and airy. Add in the lemon juice and lemon extract. Add in the oil Add in the yogurt and mix until combined

    In a small bowl whisk the flour, baking soda,baking power and salt.

    Add the flour mixture into the wet ingredients and incorporate it together. Mix until just combined.

    Pour the batter into a baking loaf tin.Bake on preheated oven 180°C for about 50-55 minutes or until a toothpick inserted comes out with a few crumbs.

    During this time make the lemon simple syrup by combine the two ingredients and cooking it until the sugar has dissolved and it comes to a boil

    Take the cake out of the pan and brush liberally with lemon syrup

    Make the icing with powdered sugar, lemon juice and milk.

    Let the cake cool and pour icing and spread on it.
