Winter Melon and Tomato Simmer

This is about the time of the year when I want to eat warm simmered dishes. I always make Tomato Simmer , so I tried adding winter melon to it.
I feel like winter melon goes with everything.
This is a great dish that features winter melon as the main ingredient. Definitely give it a try.

When simmering, please stir it a few times to make sure it doesn't burn.
If you add vegetables such as broccoli and shimeji mushrooms you'll get even more volume.

Ingredients

4 servings
  1. 400 gramsWinter melon
  2. 1thigh Chicken thigh
  3. 1/2Onion
  4. 1 tbspVegetable oil
  5. 100 mlWater
  6. 2★ Buillion cube
  7. 400grams/can ★ Canned diced tomatoes
  8. 40 gramsGrated cheese
  9. 1 dashSalt and pepper
  10. 1to garnish Parsley

Cooking Instructions

    Remove the rind, seeds, and insides from the winter melon and cut into bite-sized cubes (about 2 cm).

    Cut the onion into 1 cm cubes and the chicken into bite-sized pieces. Lightly flavor with salt and pepper.

  3. 3

    Add some vegetable oil to a frying pan and brown the chicken on high heat. Reduce to medium heat and add the onions.

  4. 4

    Once the onions have become translucent, add the ★ ingredients and the winter melon. Once it comes to a boil, cover and simmer for about 20 minutes on medium heat.

    Transfer to serving dishes, top with the grated cheese, and garnish with parsley if desired.
