I have prepared this delicious and healthy dish with reference to my friend. It's a Shrilankan recipe , healthy and tasty. I have taken a twist, including dry coconut powder and white sesame seeds to bring an amazing taste. I have used boiled and de-skinned beetroots to sav time. Besides that I have used coconut oil 🛢️ to bring more flavour and aroma to the curry.

First arrange and assemble the ingredients for convenience.

Heat coconut oil, add and allow to splutter cumin seeds. Fry chopped garlic on medium flame till aromatic. Further add sliced onions, green chilli, curry leaves and asafoetida and saute till onion changes colour to light brown.

Then, add chopped beetroots, coriander powder, cumin powder
and salt. Mix well. Add a bay leaf 1/4 cup water to the curry, cover and cook on low flame for 2 minutes. - 4
Now add coconut powder, curry powder and mix nicely. Cover and cook for a minute. The beetroot dry curry is ready to serve. Garnish with coriander leaves and white sesame seeds and serve with steamed rice. Njoy and Thanks.
