Soboro Style Tofu & Stir-Fried Vegetables

I wanted to make shira-ae but I didn't have enough vegetables to do so. However, I was able to stir-fry this!
This became a soboro-style dish, which turned out welll.

I would say be sure to cook it rapidly. The tofu will mix better with the veggies if it's of a fine, soboro-like consistency. For serving 2. Recipe by Captain C

Ingredients

2 servings
  • 1 blockSilken tofu
  • 1Egg yolk
  • 1 largeCarrot
  • 1 headKomatsuna
  • 1 tbspSesame oil
  • 1 tbspMirin
  • 1 tbspSugar
  • 2 tbspSoy sauce
  • 1Salt and pepper

Steps

  1. 1

    Wrap the tofu in paper towels and heat it up in the microwave for 3 minutes.

  2. 2

    Use a mortar and pestle to grind the tofu until it's smooth. Add in the egg yolk and mix well.

  3. 3

    Thinly slice the carrots and the komatsuna into 2cm lengths.

  4. 4

    Pour the sesame oil into a frying pan and set the heat to high. Add what you chopped up in Step 3 and cook until everything has wilted. Then, add the tofu from Step 2 and stir-fry it rapidly.

  5. 5

    Once the water has evaporated and the tofu has become slightly crumbly, add in the mirin, sugar and soy sauce and stir-fry well.

  6. 6

    When the water is almost gone, and the tofu has reached a soboro-like consistency, season with salt and pepper and it's done!
