Boerewors with mashed potatoes served with a tomato chili relish

I have lived in South Africa for 14 years. Whenever we had a braii, we had to include Boerewors. This one we manufactured ourselves, with some Freddy Hirsh seasoning pack. We just grind the meat 1 time on coarse. We used Argentinian Chuck Roast and pork neck. You need a good pork casing and you may not prick the wors- the fat needs to stay inside.
You can however get a beautiful Boerewors at Biltong St Marcus
We serve with mashed potatoes.

Grill the Boerewors 9 minuttes on each side

Heat olive oil in a pan, add the red onions, garlic and sugar
- 3
Cover with a lid- moderate heat- allow the onions to caramelize. Stir often- add the rest of the ingrdients simmer for 15-20 minuttes.

Season with salt and pepper

Serve with mashed potatoes and some Dijon mustard
