There are a thousand ways to make minestrone—some with meat, some with rice, some with pasta. Here’s my version for today.

Peel and thinly slice the onion, then sauté it in olive oil until golden.

Add the diced potatoes, garlic, and carrot. Pour in 8 cups (2 liters) of water. Add the beans. Simmer over medium heat for 2 hours.

Add the spinach and pasta, and cook for another 10 minutes. Season to taste with salt and pepper.

Serve with homemade pesto on the side.
