Ingredients

Serves 4 servings
  1. 2potatoes
  2. 1carrot
  3. 5 oz (150 g)dried white beans (such as navy beans or cannellini)
  4. 5 oz (150 g)small soup pasta (like ditalini or small shells)
  5. 2 handfulsfresh spinach
  6. 1onion
  7. 3 tablespoonsolive oil
  8. 1 clovegarlic
  9. Salt and pepper
  10. Homemade pesto

Steps

  1. 1

    Peel and thinly slice the onion, then sauté it in olive oil until golden.

  2. 2

    Add the diced potatoes, garlic, and carrot. Pour in 8 cups (2 liters) of water. Add the beans. Simmer over medium heat for 2 hours.

  3. 3

    Add the spinach and pasta, and cook for another 10 minutes. Season to taste with salt and pepper.

  4. 4

    Serve with homemade pesto on the side.
