Cafe-Style Teriyaki Chicken & Rice Plate

Just grill the chicken with honey teriyaki sauce and mix up some butter rice for a stylish, cafe-inspired plate. I created this recipe for a weekend lunch so you can enjoy veggies, meat, and rice all on one plate. It's also great for when you have guests over!

Just grill the chicken with honey teriyaki sauce and mix up some butter rice for a stylish, cafe-inspired plate. I created this recipe for a weekend lunch so you can enjoy veggies, meat, and rice all on one plate. It's also great for when you have guests over!

Add slightly less water than usual to the rice, add frozen corn, and cook as you normally would.

While the rice is still hot, mix in the butter and a pinch of salt. Your butter rice is ready!

Cut the chicken into bite-sized pieces, season with salt and pepper, and coat lightly with flour. In a separate bowl, mix together the soy sauce, honey (or sugar), sake, and mirin.

Lightly oil a skillet (using oil not listed in the ingredients), add the chicken, and cook on one side. Flip the chicken, cover with aluminum foil, and steam for 4 minutes.

Remove the foil. When the chicken is nicely browned, use a paper towel to blot any excess oil. Add the sauce mixture, stirring to coat the chicken as it cooks.

When the sauce thickens slightly and the chicken is glossy, your teriyaki chicken is done!

To serve, place lettuce on a plate, add the butter rice, and top with the chicken. Add mayonnaise if you like, and garnish with parsley.
