Ingredients

4 servings
  1. 2 tbspolive oil
  2. 1onion, chopped
  3. 2 clovegarlic, minced
  4. 2 tspground cumin
  5. 1/2butternut squash, cubed
  6. 400 gramscanned chickpeas, rinsed & drained
  7. 400 gramscan chopped tomatoes
  8. 250 mlvegetable stock
  9. 1juice of a whole lemon
  10. 1 tbspgolden syrup or maple syrup
  11. salt & pepper

Cooking Instructions

    Fry the onion and garlic in the oil until softened, then add the cumin and stir in

    Add the squash and chickpeas and cook for 3 minutes

  3. 3

    Add the can of tomatoes with its juice, stock, lemon juice and syrup. Bring to the boil and simmer for 25 minutes

  4. 4

    Season with salt and pepper and serve with rice, corn couscous or quinoa
