Cooking Instructions

Bring the meat to room temperature 2-3 hours before cooking.

I used garlic oil as a substitute for fresh garlic. Season the meat with salt and pepper, and cut the vegetables to your preferred size.

Heat a frying pan, add oil, and sear the meat on both sides and edges over high heat.

Once browned, place the meat in the slow cooker and set it to low. This is about the same temperature as the keep-warm function on a rice cooker.

In the same pan, sauté the onion and parsnip in the remaining meat juices, add the red wine, and simmer lightly.

Add all the juices and vegetables around the meat in the slow cooker and leave it for 4-5 hours.

After 5 hours, the meat will be immersed in its juices. Use these juices to make gravy.

Blend the softened vegetables in a food processor until smooth, then heat them in a pan with the meat juices, horseradish, and whole grain mustard.

The meat will be so tender it falls apart without needing a knife. Serve with the rich gravy!
