Ingredients

Makes about 75 gyoza
  1. 1.1 lbspork shoulder or pork stir-fry strips (500g)
  2. 1/2medium head cabbage
  3. 1 bunchgarlic chives (nira)
  4. 1 teaspoonsalt
  5. 1 1/2 tablespoonsoyster sauce
  6. 1/2 tablespoonchicken bouillon powder
  7. 1/2 tablespoonsoy sauce
  8. 1/2 tablespoontoasted sesame oil
  9. 2 clovesgarlic
  10. 1/2thumb fresh ginger
  11. 75gyoza wrappers
  12. 1-2 tablespoonsvegetable oil
  13. 1/4 cupwater (50 ml) per batch

Steps

    Finely chop the cabbage in a food processor, then squeeze out excess moisture.

    Slice the garlic chives into small pieces.

    Finely chop the garlic and ginger in a food processor.

    Add the pork, soy sauce, oyster sauce, chicken bouillon powder, salt, and sesame oil to the food processor. Process until the meat is ground and well mixed.

    Transfer the ground meat, cabbage, and garlic chives to a bowl. Mix until the filling becomes sticky and well combined.

    Cover the bowl with plastic wrap and let the filling rest in the refrigerator for about 30 minutes.

    Wrap the filling in gyoza wrappers. Heat a nonstick skillet with a little oil, arrange the gyoza, and cook over medium heat until the bottoms are golden brown.

    Add water, cover with a lid, and cook over medium-high heat until the water evaporates and the bottoms are crispy. When they look deliciously browned, they're ready!
